I just took a shot at making knishes, with some left over mashed potatoes I had from yesterday. Wasn't the best, but I know what mistakes I made now. Ate them when they just came out of the oven, the crust was more like a pretzel than flaky knish. But that could be because I didn't let it cool for at least an hour. Perhaps they'll be better later.
But Mustard makes them taste acceptable. Not bad.
Strange how mustard goes with potato in this instance, but I can't think of any other potato dish I would eat with mustard.
