Best Language for Web-Based Image Editor?

I am pretty into audio, and I developed a rudimentary tool for digitizing loudspeaker response curves and doing a bunch of interpolation and whatnot so that I could do mathematical modeling of system responses. Well, I used an existing open-source image digitizer to pull the raw data and then my back-end handled the numbers so that I could do what I needed.

ANYWAY, it was written in VB.net and isn't super useful for people that aren't running Windows. A lot of people on the audio forums seemed like they would really appreciate such a tool, and I have been thinking about making a web-based all-in-one datasheet digitizer and interpolator.

The first obvious choice that comes to my mind is Java, but I haven't really used it and every experience I have ever had with Java web apps has been slow and buggy. I want to know if the resident web-gurus in here think that jQuery and HTML5 could be of use for what I want to do.

- Load image onto page (any common format)
- Click-n-pick axes and data points along curves
- - Have a little zoom box that shows a magnified portion of the image around the cursor for more accurate digitizing
- Takes assigned axes and picked points and exports them to text/CSV (easy part).

My background definitely isn't in coding and I am somewhat code-tarded, but I enjoy a challenge. Any suggestions for languages to try out for this?
